Wine category: Sparkling White.
Location of vineyards:: Hills of the Province of Chieti
Grapes: 75% Chardonnay, 25% Trebbiano.
Soil composition: A medium mixture tending to be calcareous-clayey in layers, varying from the foothills of the Majella mountain, to the sweet hills on the high side of the Adriatic Coast.
Altitude: 120-410 m. above sea level.
Exposure: South, South-West.
Cultivation system: Runner system and Abruzzo trellis.
Yield (hectolitres per hectar): 90
Harvesting period: End of August, September.
Vinification: After lightly pressing the grapes, the resulting must is fermented at a controlled temperature; subsequently re-fermentation takes place according to the Charmat method, which brings out the natural sparkle of the wine.
Refinement: In stainless steel tanks.
Perlage: Subtle and persistent.
Colour: Light yellow with greenish nuances.
Bouquet: Exclusive and involving, pleasantly fruity, with floral notes (hawthorn and broom) and fruity nuances of pineapple, yellow peach and melon.
Taste: Lively, fresh and harmonic.
Alcohol content: 10,5% Vol
Serving temperature: 8/10°C
Food pairing: Ideal to sip on any occasion. Excellent as an aperitif, it can be drunk at anytime of the day. Goes well with light lunches, snacks and fish hors d'oeuvre.
