Harvesting period: First and second ten-day period of October.
Vinification: Hand picked selection of grapes, soft pressing.
The resulting must ferments in brand-new wooden barrels at a controlled temperature.
Refinement: Over 16 months of permanency on leaven.
Colour: Intense straw-yellow.
Bouquet: The intense pear scent first stands out from the others, ripe yellow fruit inklings merge together with floral nuances of broom, acacia and balsamic tones: bright ending with an aroma of beeswax.
Taste: Clear, savoury, with a distinctly floral and long-lingering
final olfactory sensation.
Alcohol content: 14,0 % vol.
Serving temperature: 15/18 C°
Food pairing: Spiced raw fish based hors dÅfoeuvre, velvety saffron sauce of chick-peas and shrimps from the Adriatic Sea, timbale of white anchovies au gratin, dentex in pastry, roast sea-bass with potatoes, stuffed Amber Jack tuna steak, grilled tuna steak on a bed of red onion.
Soft oily cheeses like Gorgonzola, with acacia honey.
