Vinification: Fermentation in pressure tank gives off carbon dioxide that remains in the weight, producing the typical perlage, which lasts about 40 days. During this time the effect of the yeasts creates secondary aromas. The stabilization of tartaric acid occurs later, refrigerating the must at low temperature. The vinification process ends with the isobaric bottling of the wine.
Colour: Straw-yellow with fine and persistent perlage.
Bouquet: Intense and lingering; the clean scent of crust of bread gives immediately way to white fruit and citron notes, perfectly combining with floreal scents.
