Fresh and full-bodied taste, excellent minerality and rich acid structure. Its liveliness and fragrance enhance its persistence. The retro-olfactory sensations confirm its organoleptic thickness. Perfect as aperitif, ideal with the typical dishes of the Mediterranean fish cuisine.

Vinification
Vinification: The fermentation in pressure tank gives off carbon dioxide that remains in the weight, producing the typical perlage during bottle fermentation, which lasts about 60-85 days. During this time the effect of the yeasts creates secondary aromas. The stabilization of tartaric acid occurs later, refrigerating the must at low temperature. Next step is the isobaric bottling of the wine.

Colour: Straw-yellow with fine and persistent perlage.
Bouquet
Bouquet: Intense, sage and thyme balsamic fragrance with bloom flowers and acacia blossom nuances, bready crust close-focused overtone.
Taste
Taste: Fresh, full body, excellent in minerals and in its acid structure. Aroma and sparkling enhance its length. Aftertaste sensations confirm the high quality of this wine.
