Vinification: The must is obtained by gentle mashing of the grape at low temperature. Then it is decanted and fermented at a controlled temperature, to enhance the qualities of this grape variety.

Food pairing: Ideal with seafood, shellfish and raw fish. Excellent with hors d’ouevres, delicate courses, and white meats.
