Pecorino wine - Characteristics and origins
A recently rediscovered grape variety and object of contention between Marche, Lazio, and Abruzzo.
Its name derives from the Italian word for “sheep” (“pecora”) and the local practice of transhumance, i.e. the movement of sheep between summer and winter pastures.
As the sheep descended from the mountains in autumn on their way to pastures closer to the sea, it seems they were quite fond of this grape, and thus its nickname as “sheep grape”.
Pecorino exhibits a moderate level of polyphenols with a delightfully complex and lingering bouquet of flowers, fruits (especially tropical fruits), dry vegetables, and notes of spice.
To the palate it is firmly structured, harmonious, pleasant, and persistent. It is generally best suited for medium ageing but in some cases may age well for longer periods, especially in barriques.

Local vine, straw yellow-coloured wine with greenish tones and a fruity and floral bouquet. It is fresh and well-balanced to the taste. It blends very well with first and second fish-based courses as well as white meats. To be served at 8/10°C.

Straw-yellow color with greenish nuances with fresh, tasty and fragrant taste, with mineral notes. The ideal combination is seafood cuisine: shellfish and raw fish. Excellent with hors d’ouevres, delicate courses, and white meats.

It is a pale straw yellow-coloured wine with a fresh bouquet, tropical hints that combine with elegant floral scents. Its taste is full-bodied, well-structured and long-persistent with mineral notes. Pairing with fish, white meats and cheeses is recommended. Excellent as aperitif, it can be enjoyed at any time of the day. To be served cool at 10/12°C.
